I know I told myself that right after Thanksgiving I would go back on Weight Watchers. That I would start lifting those weights I have a sitting in the corner of my bedroom. That I would walk my dog Jimi everyday for an hour, and that I would get in my car and go to the gym and pretend to sweat. But who am I kidding. The first free day that I get when I can actually implement these new policies and what do I do instead. Bake cookies. I just couldn’t help it. The lure of cinnamon, ginger, cloves and molasses was just too strong for me to resist. It was calling to me. And I answered. HELLO COOKIES!

These Molasses Cookies are a real family favorite. I seriously can’t keep them in stock. I made them on Friday, and they were gone by Saturday. And no, I didn’t eat them all. I shared. They’re very easy to make actually, as you mix them up in just one pot. Yes a pot!  This sinfully chewy cookie just oozes rich molasses flavor and spices. I can assure you, these will become one of your family favorites also.

These cookies freeze really well. You  can store them in an airtight container, just layer the cookies with wax paper in between and they should last up to 3 weeks.

All cookies need to be the same size so that they will bake evenly. To insure that all your cookies will be the same size, use an ice cream scoop.

If your shipping your homemade cookies for the holidays, these ship extremely well.

  1. There’s something so comforting in a gorgeous stack of cookies and these remind me of your beautiful ginger snaps too! I know that my baking addiction has to be shared around with fellow folk, but I get that treats and sweets are oh so tempting! ;) I think your cookies are calling me too!!!

  2. These cookies are so perfect – I bet they’re super chewy and super flavourful! I hear ya on the working out – I always complain that the reason I don’t go is because I don’t have enough time but whenever I actually get home early from work, instead of going to the gym that’s in my own bloody apartment building, I end up baking instead. Sigh. Oh well – it’s totally worth it when there are gorgeous cookies like these to enjoy!

  3. Just made these and they are delicious! Question — are the middles supposed to look a teeny bit gooey? I pulled them out of the oven as they started to crack,let them sit, and then cooled on a rack. They are wonderfully crispy on the outside and chewy in the middle. But my husband wondered if they were a little underdone. I don’t think they are, but I was curious about how yours looked in the middle… I’ve already eaten and they’re still on the cooling racks!

    1. These are definitely a chewy cookie. if you bake them too long they will be hard and crunchy. Next time you make them you could let them bake another minute or so if you think they’re too gooey or underdone. They should be flat, not puffy at all. Hope your family enjoys them…and have a very happy holiday!

    1. OK, I made a dozen of these yesterday, and froze the rest for later. Good thing too, because they are already gone today. Even my husband, who doesn’t like anything, liked them! Thank you for sharing this great recipe. It is definitely a keeper. :D

  4. Oh my gosh I want one right now, they look amazing. I’m really liking that you shared the story about the gym because I’m thinking if I get up and drag myself to the gym at least four days this week I’m rewarding myself on Saturday by making these babies. Of course ill try to share also. Now I have something to look forward to so thanks for sharing!
