It’s September, and son #2 is out of the house again living the high-life as a student in Santa Barbara where he’s studying to be an EMT. It’s a hard program, so let’s all pool our positive thoughts together and send them in his direction. Thanks guys! Anyway, he’s been up there about a month, but he’s coming home this Sunday and we’ve decided to have a little brunch in his honor…cause his mama misses him so much!  My parents are coming over, because they too miss him a great deal, and his big brother, son #1 is coming, but he won’t admit how much he misses his younger brother.  Ah, kids!

I’m preparing all his favorites; homemade waffles, fresh fruit and crispy bacon. He has requested that I bake this Chocolate Chip Cornbread which he likes toasted and topped with a big slab of butter. I’ve made cornbread a million different ways, but I particularly like this one for breakfast because it’s a little bit sweet and a little bit savory. If you can, it’s a treat to serve it right out of the oven.

As with all batters, mix this one just until all ingredients are incorporated. Do not over mix.

  1. I love cornbread and chocolate chips but never would have thought to pair the two together. It looks very tasty and sounds exceptionally intriguing. I may just have to make this. Even I can bake cornbread so hopefully I won’t mess it up. :)
    Good luck to son # 2. I’m sending all sorts of positive waves his way. I leave tomorrow to Portland, Me. to take care of son # 4 because he is having surgery 9/19 to correct a deviated septum. Maybe he will finally have some sort of sense of smell. :) Of course, given that he is a 22 yr. old bachelor in the USCG, not having a sense of smell could be a blessing. :D

  3. Woman, you are just not right. Only you would make something that I would normally turn my smeller up at look and sound so fabulous! I can see how this would work, love the texture of cornbread and pair that with chocolate. Well, touch me in tha mornin’ and then just walk away!

  4. I have never seen chocolate chips in a cornbread, but if it is a son’s special request, I know it has to be good! :) We all do the same thing, I think. The away son/daughter comes home and we cook/bake everything they love in order to 1. make them happy 2. make them want to come home again soon! :) My son, child #2, just left for college this week and I miss him already. I wonder what he would think of chocolate chip corn bread…….Thanks!

  5. Mama, these are perfect, golden little loaves of deliciousness! I’m obsessed with cornbread and I’ve never thought of adding chocolate chips. Brilliant! I wish Son #2 all the best in the upcoming school year. EMTs have it rough. You must be so proud of him!
